RED WINE

A wine with an intense color and purple tones, typical of the wine's youth. A slightly sweet aroma of red forest fruits, such as raspberry, plum, and blackberry. On the palate, it is smooth, with adequate acidity, persistent, and very pleasant.

Ideal with rice dishes, pasta, legumes, vegetables, meat stews,
cured meats, various roasts, short-aged cheeses, white and red meats, grilled meats, grilled meats... Ideal to enjoy on its own or with appetizers.

From the heart of the warm fields of Jumilla, the fruit of our winegrowers’ sacrifice emerges amongst limy soils. Year after year, under the sunrise, their careful work gives shelter to the best bunches of Monastrell, Petit Verdot and Syrah grapes. Numun Selección is elaborated from selected grapes harvested during night. Monastrell grapes give the fruity and character whilst structure and complex are given by Syrah and
Petit Verdot.

GENUS MONASTRELL ROBLE

RED WINE

Genus is elaborated from selected Monastrell grapes. The grapes for the elaboration of Genus were harvested in small boxes of fourteen kilos each. Once in the wine cellar, they are carefully selected for the pressing. It remains in stainless steel deposits during ten days. After rackings and the malo-lactic fermentation, it was aged for a short period into American and French new oak barrels, in the Crianza Room, with temperature and humidity controlled, and finally the wine gets rounded.

CELIA VERDEJO

WHITE WINE

In the elaboration of this wine modern techniques of cold treatment of the harvest are used for the extraction of the finest must, and it is fermented under controlled temperature. Firstly, and once the grape has been received, it is carefully crushed with
a roller crusher, and follows a peculiar process of cold maceration in a stainless steel tank for the extraction of aromas from the skin of the grape. The must is extracted by gravity without any mechanical action, and then the must is cleaned and fermented at a controlled temperature of around 15ºC.It is stored in tanks for further bottling.

OLIVEOIL

Entrañable Ecológico is obtained from organically grown olives where the farmer has opted for sustainable production without disturbing the ecosystem, with the aim of guaranteeing naturalness and imbuing the final product with personality.

Varieties Pure natural juice extracted from Picual, Arbequina, Cornicabra, and Manzanilla olives. Four varieties rich in vitamins A, D, E, and K that provide one of the most excellent and healthy ingredients in the Mediterranean diet.

SABATACHA CRIANZA

RED WINE

Deep cherry red in color, with hues reminiscent of black prune. On the nose, it displays intense aromas of ripe dark fruits typical of the Monastrell variety, elegantly complemented by spicy andtoasted notes from the oak aging. On the palate, it offers a
smooth entry with a sweet sensation, full body, polished tannins, and a flavorful, persistent finish.

Ideal with all types of meat dishes, including grilled and roasted meats, meat stews, and cured pork products. Also pairs beautifully with paellas, hard cheeses, and richly flavored vegetables

NUMUN SYRAH

RED WINE

BSI is working with varieties like Syrah, that has perfectly adapted to the climate and soil of Jumilla area, a privileged terroir where this variety produces strong and aromatic
grapes. Numun Syrah is elaborated from Syrah grapes carefully selected grapes harvested during night. Maceration phase is long, in order to obtain the characteristic aromas and
color of this grape variety.

GENUS CUVEE ROBLE

RED WINE

Made from grapes of the Monastrell variety, from plots cultivated in dry land and harvested by hand from vines that are over 20 years old, at the height of the production season for quality grapes, the vines have a very low yield, approximately one kilo. Once the grapes are received at the winery, they are reviewed and selected, and treated
very carefully when crushed. The vatting lasts six days, in stainless steel tanks, with temperature control and careful pump-overs to extract the aromas and color. Once the wine is finished after malolactic fermentation, it is introduced into new American
and French oak barrels, inside a heated warehouse. The aging period is four months.

CELIA MONASTRELL

ROSÉ WINE

Celia Rosé is elaborated from Monastrell grapes harvest by hand at the exact point of ripening. One in the winery, the must extraction is done very quickly, getting only the first must , which is high quality must .The rest of components are separated. The fermentation process is done with selected yeasts at controlled temperature to keep all the fruit aromas. After the treatment, the wine is bottled, keeping part of the natural carbon dioxide that will give freshness and a sparkling touch in the mouth.

Sabatacha Reserva has been elaborated with Monastrell grapes, coming from old vines
with small production. Once in the winery, the grapes are carefully selected. Maceration phase takes 10 days, only some pumping are made in order to get a full-bodied and more structured wine.

Medium-high color intensity, with red and tile tones. Ripe fruit and oak spicy aromas. Full bodied ,smooth and complex wine, well structured and balanced.

ENCEBRAS ORGANIC

SANGRIA

Refreshing drink produced with organic red wine and natural citric fruits made of concentrated juice, natural spices extract and organic sugar. The base for this drink is a young red wine with medium color intensity and pleasant fruity aromas. Fruits concentrates are carefully chosen. During the entire vinification process only natural products are used.

As a result of this process, we obtain a fresh, refreshing and sweet organic drink, ready to drink at any time.

Wine made from Airén grapes harvested in a little earlier than usual. Its careful elaboration results in a wine balanced in body and color, pale yellow clean and bright. With aromas of banana and apple, in the palate it is light, smooth, velvety, fresh and
pleasant to drink.

A perfect pairing with snacks, seafood and fish in general. Vegetables, salads, pastas or pizzas.

NUMUN MONASTRELL

RED WINE

Numun is elaborated from selected Monastrell grapes harvested during night . During the maceration phase, which takes around 48 hours, we only do pumpings, so that grapes can move inside the deposit. In the meantime, maceration temperature is controlled, and it reaches a maximum of 25ºC. Temperature during fermentation phase goes from 20ºC. to 22ºC.

An Intense red Cherry color. Aromas of riped dark fruits like raspberries, plum and blackberry. A sweet sensation, elegant tannins, long persistent and very pleasant in mouth.

GENUS MONASTRELL

Wine made of Monastrell grapes. Before harvest time, our enologist made a maturity evaluation process to get the exact days to do haverst some days before In order to obtain a moderated alcoholic degree. Once in the bodega, a careful vinification is done with a short maceration period for 4 days at a controlled temperature. To preserve the freshness of a young wine, it is stabilized and bottles few months after its elaboration. Medium deep ruby red color. Mature red fruits aroma and a sweet touch typical of Monastrell. The wine is round, soft and well structured in mouth.

ROSÉ WINE

Wine made from grapes of the Monastrell variety, early harvested. Its careful elaboration results in a rosé wine balanced in body and colour, with fruity notes, in the palate it is very clean, light and fresh. 

Ideal with rice dishes, salads, aperitifs, pastas, pizzas, meats, vegetables, fish, short- cured cheeses, white meats or simply alone.
